Maple-Roasted Carrot Salad Recipe

   • 2 pounds carrots, preferably with leafy tops
   • Good olive oil
   • Kosher salt and freshly ground black pepper
   • ¼ cup pure Grade A maple syrup
   • 2/3 cup dried cranberries
   • 2/3 cup freshly squeezed orange juice (2 oranges)
   • 3 tablespoons sherry wine vinegar
   • 2 garlic cloves, grated on a Microplane
   • 6 ounces baby arugula
   • 6 ounces goat cheese, such as Montrachet, medium-diced
   • 2/3 cup roasted, salted Marcona almonds

Preheat the oven to 425 degrees.

Trim and scrub the carrots. If the carrots are more than 1 inch in diameter, cut them in half lengthwise. Cut the carrots in large diagonal slices 1 inch wide × 2 inches long (they will shrink when they roast) and place in a medium bowl with ¼ cup of olive oil, 1 teaspoon salt, and ½ teaspoon pepper. Toss well and transfer to two sheet pans. (If you use just one, they’ll steam instead of roasting.) Roast for 20 minutes, tossing once, until the carrots are tender. Transfer all the carrots to one of the sheet pans, add the maple syrup, toss, and roast for 10 to 15 minutes, until the edges are caramelized. Watch them carefully! Toss with a metal spatula and set aside for 10 minutes.

Meanwhile, combine the cranberries and orange juice in a small saucepan, bring to a simmer, then set aside for 10 minutes.

In a small bowl, combine the vinegar, garlic, and ½ teaspoon salt. Whisk in 3 tablespoons of olive oil. Place the arugula in a large bowl and add the carrots, cranberries (with their liquid), goat cheese, almonds, and the vinaigrette. Toss with large spoons, sprinkle with salt, and serve at room temperature.

As a fan of Ina, the next best thing to having her cook for you is probably having one of her cookbooks. Her husband is a lucky man and from the first couple of pages, you are reminded that Ina actually cooks with love. With this book, which I got this morning and have been earmarking pages on things I want to try, its filled with easy to follow directions. It will make a great gift for any couple just starting out or if you are like me in a great marriage with grown children who live further away. I am always looking switch things up for my husband and I think Ina’s Vanilla Rum Panna Cotta with Salted Caramel might be the right thing to make. On another note, I recently returned another book that I borrowed from the library. I was using it so much as I cooked that by the time I returned it, it was overdue. It is called Conquer Your Kitchen. It is a cookbook reference guide that is filled with all the secrets even out mothers often forgot to tell us. I have not cooked pasta without it. It’s by Chef Jai Scovers. I am looking at the book to make sure I spell her name right. I saw it online and at first I just figured I would glance through it. Big mistake. I had to end up buying a copy because I loved it so much. It is filled with so much information. I will probably give out copies of Conquer Your Kitchen by Chef Jai and Ina’s as Christmas gifts this year.

It's probably a good book, but it's so glitchy on my Nook it rarely opens and when it does it freezes every couple pages. Such a bummer.

I recently started my collection of Ina's books. Love her cooking show. I gave it four stars because I feel space is waisted by taking a full page to share a vinaigrette. Most other cookbooks do that as a side note with the main recipe allowing for more recipes to be shared.

Great recipes, photos of the food and their marriage. Enjoyed reading every recipe. The new series, "Cooking for Jeffrey," is on the Food Network. Loads of fun, a good distraction from the presidential election mess. Have bought and wrapped many copies for friends and family as holiday gifts. Looking forward to cooking and baking for the holidays. Enjoy!

Why waste that kind of money when you go online at food network. All he eats is chicken. A waste better cookbooks out there.
