Darshana Thacker is chef and culinary project manager for Forks Over Knives and a graduate of the Natural Gourmet Institute in New York City. Darshana grew up cooking alongside her mother and aunts in her native India, and today, draws inspiration from cuisines from around the world. She’s known for her hearty and distinctly flavorful creations, which draw inspiration from a wide range of ethnic traditions. Chef Darshana was the recipe author of Forks Over Knives Family and a lead recipe contributor for the New York Times bestseller The Forks Over Knives Plan. Lots to love about FLAVOR I have perused the whole book and am excited to try more recipes. Lots of ethnic variety here, and the ingredients look easy to find. I am pleased that the author sometimes recommends gluten free substitutes for some of the recipes containing gluten. I also love that she shares whether a recipe will freeze well, or how long it will keep in the refrigerator. I have made the Great Purple Pie (I brought it to a Thanksgiving dinner) and it was a hit! The only change I made was to increase the blueberries for the topping (because I knew people would want more than a drizzle, and added Cardamom because I add spice whenever I can. I have recommended this book to several friends.
